Creamy Lemon Tuscan Herb Cod

Ingredients:
9oz Cod
For The Sauce:
2 Tbsp Tuscan Herb EVOO
4-6 Garlic Cloves
1 TBS Mediterranean Rub
Ground Pepper
1 tsp Citrus Dill Sea Salt
14oz Coconut Milk
½ Cup Seafood Stock or Chicken Stock
2 Tbsp Dry White Wine
2 Tbsp Meyer Lemon Balsamic
1 Tbsp Corn starch + 2 Tbsp Water
1 Cup Shredded Parmesan
1 Cup Chopped Kale
Directions:
In a medium skillet at medium to high heat, sear the cod straight from the freezer for 5 minutes on each side.
In the same skillet, add the Olive Oil. Once the oil is hot, add the garlic cloves and sauté until fragrant.
Add the rub, salt, pepper and stir until well combined.
Reduce to a medium to low heat. Slowly add in the coconut milk, seafood stock, Meyer Lemon, and white wine. Stir until combined. Then bring it to a simmer for 1-2 minutes.
Add in the grated parmesan cheese, whisking until fully melted. To thicken the sauce, you will add the water and cornstarch mixture and continue to whisk until it has thickened, 1-2 minutes.
Add in the chopped Kale and stir until combined, and simmer for 2-3 minutes.
Add in the cod ensuring it is submerged in the sauce, and simmer for 5-10 minutes.
Remove from heat and serve immediately
