Watermelon, Feta, & Prosciutto Skewers

These Watermelon, Feta, and Prosciutto Skewers will become a go-to recipe for entertaining all summer long. Sweet watermelon, salty feta and prosciutto, and fresh mint are out of this world! Finished with a zesty dressing for a delightful bite!

Ingredients:

¼ cup Key Lime Infused Olive Oil

¼ cup Mojito White Barrel Aged Balsamic

2 tsp Mojo Citrus Seasoning Salt

1 Personal Size Watermelon

8 oz Block Feta

8-10 Slices Prosciutto

10 Mint Leaves, chiffonade


Directions:

  1. In a jar combine Key Lime Olive Oil, Mojito Balsamic, and Mojo Citrus Seasoning Salt.

  2. Cut the rind off the watermelon, and cut into uniform ½”-1” cubes.

  3. Cut feta into uniform ½” pieces, and slice prosciutto into thirds, then roll.

  4. Skewer prosciutto, watermelon, feta, prosciutto, and watermelon.

  5. Sprinkle skewers with mint and drizzle with dressing. Enjoy!
