Chicken Gyros w/ Tzatziki

Chicken Marinade:

1 1/2 lbs. Boneless Skinless Chicken Breasts

1/4 c Greek Yogurt

1 tsp Black Pepper freshly cracked

Tzatziki Sauce:

1 c Greek Yogurt

2 Baby Cucumbers, grated

1 Tbsp Fresh Dill, chopped

1 Tbsp Lemon Juice

1 Tbsp Lemon Zest

1 tsp Black Pepper freshly cracked

Assembly:

Pitas or Naan, warmed

Shredded Lettuce

Pickled Onions or Red Onion, thinly sliced

Cucumbers, diced

Tomato, diced

Feta, crumbled


Directions:

  1. Whisk together ingredients for chicken marinade until smooth, rub on chicken and allow to chill for a minimum of 30 minutes or a max of 8 hours.

  2. Prepare tzatziki by combining all ingredients in a bowl. Taste and adjust as desired. Store in fridge until ready to use.

  3. Grill chicken in a grilling pan on the stove or sear and then bake at 375 F for 20 minutes or until the center is no longer pink and the internal temperature is 165 F.

  4. Slice chicken. Assemble gyro with your desired toppings, chicken, and tzatziki sauce. Enjoy
