Vanilla Maple Matcha Bread


For Crumble:

2 TBS Unsalted Butter, soft

3 TBS Flour

1 TBS Brown Sugar

1 TBS White Sugar

1/4 cup Sliced Almonds, toasted

For Bread:

1 1/2 cups Flour

1 tsp Baking Powder

3/4 cup Sugar

2 lrg Eggs, room temperature

1 tsp Vanilla Extract

3/4 tsp Almond Extract

3/4 cup Whole Milk, room temperature

1 TBS Matcha Powder


  1. Preheat oven to 350 F. Butter and flour a bread pan.

  2. Make crumble: Combine everything but the almonds and set aside. Toast the almonds and set aside.

  3. In a bowl whisk together flour, baking powder, salt, and matcha.

  4. In another large bowl whisk evoo & sugar, drop in eggs and whisk until really fluffy.

  5. Add in vanilla and almond extract and mix again.

  6. Add half the flour and half of the milk and STIR, and repeat (do not use a mixer, the dough will become tough) Lumps are ok!

  7. Pour the batter in the prepared baking dish. Top with almonds and the crumble mixture.

  8. Bake for 30 minutes.

  9. Turn Oven down to 300 F, rotate the baking dish and bake for another 20-30 minutes until done. Check at 20 minutes with a tooth pick.

  10. Let cool and enjoy!
