Peach & Cherry Pistachio Salad

Ingredients:
1 Bag of Arugula
Fresh Basil - 10 Leaves chiffonade
1/2 Cup toasted & chopped pistachios
1 cup cherries, pits removed & cut in half
3 ripe peaches, washed and cut into slices
Burrata
Dressing:
1/4 Cup Peach Balsamic Vinegar
1/2 Cup Basil Genovese Infused EVOO
1 TBS Feta & Herb Dipper
1 TBS Shallot, diced
In a deep salad bowl place arugula, fresh basil, toasted pistachios, cherries and peach slices. Toss.
Add burrata and cut in quarters and place around salad.
In a bowl whisk together Vinegar, dipper, shallot and drizzle in the basil evoo. Drizzle over salad beware of over dressing your salad!
