Peach & Cherry Pistachio Salad


1 Bag of Arugula

Fresh Basil - 10 Leaves chiffonade

1/2 Cup toasted & chopped pistachios

1 cup cherries, pits removed & cut in half

3 ripe peaches, washed and cut into slices



1 TBS Shallot, diced

  1. In a deep salad bowl place arugula, fresh basil, toasted pistachios, cherries and peach slices. Toss.

  2. Add burrata and cut in quarters and place around salad.

  3. In a bowl whisk together Vinegar, dipper, shallot and drizzle in the basil evoo. Drizzle over salad beware of over dressing your salad!

  4. Enjoy
