Smoky BBQ Chicken Pizza with Pizzaolio EVOO

Ingredients:
Chicken:
1 Chicken Breast
¼ cup Smoked Balsamic
¼ cup Pizzaolio EVOO
2 tbsp Sweet Applewood BBQ Rub
1 tsp Applewood Sea Salt
½ tsp Pepper
Pizza:
1 pack of Premade pizza dough
¼ to ½ cup Maple Chipotle Grill Sauce
1 ½ cups Mozzarella Cheese
¼ cup sliced Red Onions
2 tbsp Cilantro
2-3 tbsp Pizzaolio
Smoked Balsamic, For Drizzling
Instructions
In a bowl, combine chicken, Pizzaolio EVOO, Smoked Balsamic, Sweet Applewood BBQ Rub, Applewood Sea Salt, and black pepper. Marinate at room temperature for 20 minutes.
Cook the chicken, on a grill, until it reaches an internal temperature of about 160 degrees F.
Transfer chicken to a bowl and shread. Set aside.
Preheat the oven to 450 degrees F and and lightly grease a 14-inch pizza pan with EVOO.
Lightly dust your hands with flour and carefully stretch the pizza dough into a 14-inch circle. Pick up the dough and work around the edges, gently pulling and letting gravity help you, then lay the stretched dough flat onto the pan. Drizzle 2-3 tbsp of Pizzaolio EVOO on the crust and spread around the dough.
Spread the Maple Chipotle Grill sauce evenly over the crust, leaving about a quarter to a half inch of space around the edges. Top evenly with mozzarella cheese, then BBQ chicken, red onion, and Cilantro.
Bake according to doughs instructions or until the cheese is bubbly and the crust is golden-brown, about 10 to 12 minutes.
Finally, drizzle the pizza generously with extra Smoked Balsamic before slicing and serving.
