Deconstructed Spring Roll


Ingredients:

8 oz Rice Noodles

1 c Cabbage, shredded

1 Cucumber, julienned

2 Carrots, julienned

1 Red Bell Pepper, julienned

1/4 c Cilantro, minced

1/4 c Mint, minced

1/4 c Peanuts, chopped/roasted

Sesame Seeds


Dressing:

3 Tbsp Ginger, fresh/minced

2 Garlic Cloves, minced

1 Tbsp Honey

1 tsp Red Pepper Flakes

1 tsp Pepper


Directions:

  1. Cook rice noodles according to package directions. Rinse noodles well with cold water, drain and transfer to a large serving bowl. Add cabbage, cucumber, carrots, bell pepper, cilantro and mint to rice noodles and toss to combine. In a bowl or blender, combine dressing ingredients well.

  2. When ready to serve, drizzle dressing over salad and toss well to evenly coat. Garnish with peanuts, cilantro and sesame seeds. Enjoy!
