Presented in a pineapple boat, it’s a vibrant, flavor-packed dish that feels like a mini vacation on your plate. Perfect for summer entertaining, date night dinners, or just treating yourself to something unforgettable.

Ingredients:
1/2 cup Pineapple Habanero Balsamic
2 teaspoon Mojo Citrus Seasoning Salt
3 tablespoons Chipotle Lime Rub
1/3 cup Pineapple Juice
6 tablespoons Fiesta Spice EVOO, divided
1 pound of medium shrimp
Coconut Lime Rice:
2 cup jasmine rice
1 can coconut milkÂ
1 cup water
¼ cup Key Lime EVOO
1/2 teaspoon Lime Fresco Sea Salt
1 lime zested
Pineapple Habanero Salsa:
1/2 pound pineapple diced
2 1/2 Roma tomatoes cored and diced
1/4 cup cilantro finely chopped
1/4 cup red onion finely chopped
1/4 cup Habenero peppers diced
1/2 tablespoon lime juice
Mojo Citrus Sea Salt to taste
¼ cup Pineapple Habanero Balsamic
2 tablespoons Fiesta Spice
Instructions
Pineapple Habanero Shrimp:
Add the first four ingredients and 4 tablespoons of Fiesta Spice EVOO into a ziplock bag and mix together. Reserve 1/3 cup of marinade for later.
Add in the shrimp and let marinate for at least 30 mins. Heat up a pan on medium heat with the 2 tablespoons of Fiesta Spice. Add in the shrimp and cook for two minuets per side until opaque. Remove shrimp and add in the reserved marinade to the pan. Let bubble and thicken slightly and then add the shrimp back into the pan and
Coconut Lime Rice:
Rinse rice thoroughly until water runs clear.
Add all ingredients into Rice Cooker and let cook for the full amount of time. Once done cooking, fluff rice with a fork and serve!
Pineapple Habanero Salsa:
In a large bowl, combine all ingredients and let sit for 30 minutes to marinate. Serve with shrimp.
