Grape Quinoa Salad


3 cups Quinoa, cooked

2 cups Purple Grapes, sliced in ½

5 cups Spring Mix

15 oz can Chickpeas, drained

½ Red Onion, sliced

1 cup Feta, crumbled

2 Lemons, juiced


  1. Cook quinoa to the directions on the package. While cooking prep other ingredients.

  2. Slice grapes in half, drain and rinse chickpeas, crumble feta, slice onion, and juice lemons.

  3. Combine all ingredients to a bowl, pour juice and oil on last, then season with salt. Enjoy right away or let chill in fridge for one hour.
