Italian Almond Pear Cake


5 Tbsp Butter

2 Eggs

1/2 c Sugar

1/3 c Flour

1/2 tsp Baking Powder

2 Pears

1 ¼ c Ground Almonds, NOT almond flour

¼ c Sliced Almonds

Powdered Sugar, for garnishing


  1. Preheat the oven to 375 F. Oil an 8” springform pan and line the bottom with a piece of parchment paper.

  2. In a large bowl of a standup mixer, beat butter, Brown Butter EVOO, and sugar on high speed until fluffy. Add eggs one at a time, beating well in between and scraping down the sides and bottom of the bowl.

  3. On low speed, add flour, baking powder, ground almonds, French Toast Sugar Shaker, and Vanilla Bean Sea Salt. Pour batter into prepared springform pan. It will be very thick.

  4. Prepare your pears by peeling and coring them. You can either half them and put them cut side down in a circle, or quarter them or slice them. The fun part is up to your imagination! Sprinkle sliced almonds on top, and bake for 30-35 minutes or until a toothpick comes out clean and cake is slightly golden.

  5. Allow to cool completely before releasing from springform pan. Garnish with powdered sugar and enjoy!
