Blueberry Mojito Chicken
Ingredients: 1 cup Blueberries
¼ cup Key Lime EVOO
¼ cup Mojito Balsamic
3 tbs Vanilla Honey
1 tsp Lime Fresco Sea Salt
3-4 Chicken Breast
Preheat oven to 450 F.
In a bowl a blend combine the blueberries, Key Lime Olive Oil, Mojito Balsamic, Vanilla Honey, and Lime Fresco Sea Salt. Blend until smooth.
Then in a Ziplock bag combine the chicken breast and ½ of the marinade. Let marinate for at least 1 hour.
Once chicken has marinated, cook for 16-20 minutes or until internal temperate reaches 165 F.
Once chicken is done let it rest for 5-10 minutes. Serve chicken breasts whole or slice before serving. Serve with the remaining sauce on top as a glaze enjoy with a light salad or cilantro lime rice.
