Purple Potato Chips
2 lbs. Purple Potatoes
2 tsp Feta & Herb Dipper
4 tbs Garlic & Herb EVOO
2-3 tbs Fresh Rosemary, chopped
1. Slice potatoes on a bias. Shake the slices in the dipper, we used a Ziploc to make this easier.
2. Place on a baking sheet and drizzle oil over top, then place in the oven at 400 F for 35-40 minutes. Turn frequently while baking, they should be evenly brown when done.
3. Remove from oven and let cool, top with rosemary, and use your favorite dip to eat with them.
