Yield: Serves 2
1/2 cup quinoa
1/4 cup cucumber
1/2 cup carrots
1 radish, sliced thin
1/4 cup cilantro
1/4 of an avocado
1/4 cup shelled edamame
1/3 cup smoked salmon
1/4 cup Cilantro Olive Oil2 TBSP
Black Garlic Tamari Soy Balsamic
1 tsp honey
1/2 tsp Black Garlic Shiitake Rub
1. Cook quinoa following package directions.
2. In a bowl add quinoa to the bottom, arrange cucumber, carrots, radish, cilantro, avocado, edamame and salmon around the edge of the bowl.
3. In a bowl whisk together cilantro oil, vinegar, honey and rub.
4. Serve sauce on the side of bowl or toss to coat.
