Thai Blackberry Basil Chicken
3-4 Boneless Skinless Chicken Breasts, cut into bite sizes
2 tsp Garlic, minced
3 Tbsp Black Garlic Tamari Balsamic
1 Tbsp Hoisin Sauce
1 Tbsp White Balsamic
1 tsp Sweet Smoked Chili Rub
2 tsp Sugar
1 c Blackberries
7 Basil Leaves, thinly sliced
2 Tbsp Cashews, roughly chopped
3 Tbsp Basil EVOO
In a small bowl whisk together Black Garlic Tamari Balsamic, minced garlic, hoisin sauce, White Balsamic, sugar, and Sweet Smoked Chili Rub.
In a large pan over medium heat, add Basil EVOO. Once heated up, add chicken and stir until browned.
Add sauce mixture to pan and continue to stir for 3-5 more minutes until chicken is completely cooked through. You can cut some of the bigger pieces in half to check doneness or use a thermometer.
Add blackberries and basil and stir for another 1-2 minutes. Sprinkle with cashews and serve immediately.
