Roasted Fiesta Hummus
1 large Sweet Potato, peeled, cubed, & roasted
1 can Chickpeas, drained and rinsed
1⁄4 cup Tahini
2 tbs Meyer Lemon Balsamic
2 tbs Fiesta Spice EVOO
1⁄2 tsp Applewood Sea Salt
2 tsp Sweet Smoked Chili Rub
Crackers of choice or Veggie Sticks
Preheat oven to 450 F. Peel and cube potatoes, using some of the fiesta spice evoo coat the potatoes and then bake in oven for 25- 30 minutes, flipping halfway through. Let potatoes cool before making the hummus.
In a food processor combine sweet potato, chickpeas, tahini, Meyer lemon balsamic, fiesta spice evoo, garlic cloves, applewood sea salt, and sweet smoked chili rub. Blend until smooth.
Be sure to taste test, add more seasoning or balsamic and oil if needed.
