½ cup Key Lime EVOO
1 cup Sugar
1 cup Flour
¼ tsp Baking Soda
¼ tsp Lime Fresco Sea Salt
1 ¼ cup crushed pineapple, well drained (if you have cheese cloth it might work best!)
Powdered sugar for garnishing
In a large bowl combine EVOO, sugar, and eggs.
Whisk in flour, baking soda, and Sea Salt. Next add in pineapple.
Heat oven to 350 degrees F. Spread into a greased 9x9, or 8x8 for a thicker bar. Bake for roughly 30 minutes. It is meant to have a gooey texture, so a toothpick won’t come out clean. A jiggle test is a good way to test doneness. Top will be golden.
Let completely cool. Garnish with powdered sugar.
