Spicy Italian Soup

Warm up with this delicious Spicy Italian Soup featuring some of our new products. This hearty soup is packed full of flavor featuring our spicy PizzaOlio Infused olive oil, kale and those wonderful Palouse garbanzo beans.

 

1 lb. mild or spicy Italian bulk sausage

4 TBS PizzaOlio EVOO

3 cups diced onions

5 cloves garlic minced

1 28-ounce diced tomatoes

6 cups baby kale

1 15-ounce can of chickpeas, drained

2 bay leaves

2 TBS Miscouglio Dried Herb Blend

8 cups chicken stock

1 tsp Black Garlic Sea Salt

1/2 cup grated Parmesan cheese for garnish

 

1. Cook sausage in a large dutch oven or pot. Remove sausage from the pot and add 2 TBS of the PizzaOlio, onions  & garlic, cook for 7 min. 2.  Add the chopped tomatoes, stock, bay leaves, Miscouglo and bring to a boil. Add the chopped kale, chickpeas, and sausage and cook for another 15 to 20 min. until the kale is tender. Add salt & pepper to taste. Garnish with grated Parmesan to serve.
