Crispy Pizza Toast
2-6 slices sourdough bread
4 oz Burrata Cheese
3 tbsp, 1 tbsp Pizzaolio EVOO
1-2 fresh tomatoes, sliced
Fresh Lemon Juice, to taste
Freshly Grated Parmesan Cheese, to taste
1 tbsp herb & garlic dipper
sea salt & fresh ground pepper, to taste
3 tbsp bruschetta
6 tbsp hot water
Preheat oven to 375 F. Brush each side of your bread with 3 tbsp of pizzaolio evoo.
Toast bread in a skillet over medium high heat for 2-3 minutes on each side until bread is golden brown. It is important the bread isn't still soft in the middle.
While bread is toasting, slice tomatoes and dress with a little lemon juice and season with salt and pepper.
When toast is done, divide burrata and spread onto each slice of toasted bread. Sprinkle dipper on top and top each slice of toast with tomatoes.
bake at 375 F for 10-12 minutes until cheese is bubbly. optional: broil for the last 2-3 minutes to get the cheese nice and browned and bubbly.
while toast is baking, prepare bruschetta in a bowl with the hot water and remaining tbsp of pizzaolio evoo.
when toast comes out of oven, grate fresh parmesan cheese over the top, then add a spoonful of the warm bruschetta sauce over each piece of toast.
Top with more parmesan and a sprinkle of the dipper. Enjoy!
