This potato salad is so simple, yet so flavorful! The dill and lemon flavors pairs perfectly with tender potatoes and a touch of mayo for a unique twist on the normal potato salad. You neighborhood BBQ just got a little tastier.
Prep Time: 10 minutes - Cook Time: 15 minutes - Total Time: 25 minutes
Yield: Serves 6
2 lb Red Potatoes, large dice1 Tbsp Dill Olive Oil1/4 cup Mayo2 Tbsp Cucumber Balsamic Vinegar1 tsp Greek Tzatziki Seasoning1 1/2 tsp Citrus Dill Sea Salt1/4 cup Scallions
In a large stock pot, cover diced potatoes with cold water.
Bring to boil and cook potatoes until fork tender, about 10-12 minutes once boiling. Drain.
In a large bowl combine potatoes, olive oil, mayo, balsamic, tzatziki, and sea salt.
Top with scallions and serve. Enjoy!
