Mashed Potato Pancake

2 cups Mashed Potatoes
2 Eggs
1/4 cup Flour
1/2 tsp Australian Flake Salt
Fresh Ground Black Pepper
2 Garlic Cloves, minced
2 Green Onions, thinly sliced
1 tbsp Cheddar & Jalapeno Dipper
1/2 cup Cooked Bacon or Ham, small diced
2-3 tsp Tuscan Herb Olive Oil
Apple Sauce and Sour cream, for Serving
1. In a bowl combine the mashed potatoes, flour and egg. Mash or stir until combined and there aren't large lumps of potatoes. Stir in the salt, pepper, garlic, green onions, cheddar & jalapeno dipper and cooked bacon or ham.
2. Heat olive oil over medium heat in a large skillet. Pour ¼ cup of batter into the pan for each pancake. Cook for 3-4 minutes on both sides until golden brown. Repeat with the remaining batter. Depending on the size of your pan, cook 3 or 4 at a time and keep the cooked ones warm on a sheet pan in the oven.
3. Enjoy with applesauce and sour cream.
