Chocolate Pavlova with Strawberry Balsamic Soaked Fruit

If you've never had a Pavlova before you're missing out! These marshmallow inspired treats are so delicious and fun, and they also happen to be one of the easiest desserts to make.

Ingredients:

6 large Egg Whites 1 cup sugar Pinch Vanilla Bean Sea Salt 1 tsp Chocolate Espresso Balsamic Vinegar 1/4 cup Cocoa Powder 2 oz Semi-sweet or Bittersweet Chocolate, chopped 2 cups assorted Berries 3 Tbsp Strawberry Balsamic Vinegar Whipped Cream Fresh Mint, chiffonade cut

Directions:

1. Preheat oven to 350 degrees F and line a large baking sheet with parchment paper. 2. Beat the egg whites on high until satiny peaks form, slowly add in sugar one spoonful at a time until the meringue is stiff and shiny. Sprinkle the sea salt, vinegar, cocoa powder, and chopped chocolate over the egg whites and gently fold together with a rubber spatula. 3. Mound the meringue in a large circle or two smaller on your lined baking sheet. Your pavlova will spread while baking. 4. Place in oven and immediately lower the heat to 300 degrees F and bake for 60 minutes. Turn off oven and leave door open while pavlova slowly cools inside. 5. Soak berries in the Strawberry Balsamic for at least 30 minutes. Top your pavlova with whipped cream, berries, chocolate, mint and an extra sprinkle of sea salt.
