1 ½ lbs Chicken Breasts, small dice
½ tbsp Tahitian Lime Olive Oil
1 tbsp Adobo Seasoning (Find in Store)
1 tsp Lime Fresco Sea Salt
1 pkg Wonton Wraps
1 medium white onion, diced
1 Jalapeño, seeds removed and minced
4 Roma tomatoes, diced
½ cup shredded Cheese
Spicy chipotle garnishing sauce *found at Ampersand
In a bowl mix the onion, tomato and jalapeño together. Add the juice of one lime and a pinch of the lime fresco sea salt.
Heat the lime olive up over medium high heat in a large skillet. Add the chicken, season with Adobo seasoning and salt. Cook till fully cooked, about 8-10 minutes, stirring occassionally.
While the chicken is cooking, line a cupcake pan with two Wonton wrappers in each spot. Bake at 350 F for 5 minutes. Fill each cup with a spoonful of chicken and top with cheese. Bake for another 6-8 minutes, until the corners of the wrappers start to turn golden brown.
Top each cup with the tomato mixture and a little bit of the Spicy Chipotle sauce. Serve with lime wedges.
